Research, prepare and cook 2 dishes (and accompaniments if appropriate) which will demonstrate your technical skills and meet the needs of the occasion you have chosen.


I have chosen Task A: “Food can be used to celebrate many different occasions,” the word food allows for all types of food as its not specific and is extremely broad. To the left is the task brief that has been analysed. The brief states that I should research foods that stand for special occasions and that any occasional food will be suitable as it states “many different” which implies a variety and an extensive range to choose from.


After analysing the task, I have decided to do the Wedding occasion and have found inspiration for desserts, starters/ canapés, and desserts. I investigated other occasions such as valentine’s day and Easter, however, I decided to do the wedding occasion as getting married is one of the most important occasions of someone’s life and one of the happiest, so I think it is important to celebrate a new beginning as it believed to be a clean start by many. In this task, I am trying to find out the most appealing foods for weddings and how to present them accordingly.
 At a wedding food is usually fresh and flavourful as to celebrate the significant event with food that will entertain all the guests and make the event memorable. Many weddings serve small finger foods to pick up buffet-style as it adds to the decoration and theme but also how beautiful weddings should be, an example of this is shown in the photo to the right from charmweddings.com. A variety of food is used from sweet to savoury, so to combine both elements there is normally a dessert table and canapés, starters, and mains, in doing this it supplies a mix of all smells, textures and flavours. Also, wedding food is usually food designed to look like fine dining foods as they have similar characteristics such as, small yet sophisticated, and the food is of high quality and standards and therefore, sometimes of high skills. Not all dishes are of high skills however the food is designed to interest the consumer and supply a unique experience.


The typical age range for a wedding is between 30 to 60 years old, with this the food should be tailored to suit and help these age ranges and therefore, fit their dietary requirements. Adults ordinarily need fewer calories as younger ages however need more health beneficial minerals and vitamins such as calcium for bones as they deteriorate and grow weaker as age increases, protein helps support healthy weight and muscle loss which is increasingly important in older ages to prevent health problems now and in the future. To cater to this, the food would have more fruits and vegetables to accommodate the extra vitamins and minerals. Traditionally, weddings focus on the couples' own cultures and conjoin them to symbolise the “union” between the couple and their lives. Along with this some weddings serve sugary desserts to encourage a sweet life ahead and many sweet adventures too. Other cultures such as French cultures, serve a dessert called the “croquembouche,” which is a structured pyramid or cone of desserts such as macarons, profiteroles, or meringue kisses and sometimes a mix. For the dishes:

  • I have looked at fishcakes for as they are simple and tasty yet also healthy as it has 0 carbohydrates and holds vitamins A, B6 and B12. These help the body in many ways such as Vitamin A supports the immune system and bone health, Vitamin B6 also maintains a healthy immune system and a concentration of amino acids in the blood. Vitamin B12 keeps the nerve cells and blood healthy and prevents conditions such as anaemia. This shows fishcakes have many health benefits along with the appealing look. Fish cakes are a suitable choice as they are low in fat yet high in protein which is important for the diet of older adults. 
  • Mini quiches are a popular starter as they are filling, nutritional and are bite-size so would be suitable for a buffet. Quiches are rich in protein as the main ingredient would be eggs. Not only this but extras can be added including spinach, mushrooms, and bacon to further the nutrition found in the quiches. This would require making shortcrust pastry and the egg filling to be perfect including all other components.
  • For the mains, I have been researching chicken kebabs as they are popular at wedding as they have the choice to be personalised with the various fillings and accompaniments such as variety of salad and sauces like yogurt or tomato chilli and many more. The variety allows for a lot of nutritional supplements and interchangeable fillings, therefore nutritional benefits can also be added very easily, this makes it suitable as the recipes can be very adaptable. This is also a popular option as it gives guests options. This would require de-jointing a chicken and making the flour tortillas perfect.
  • A classic British meal of a beef wellington is often served at weddings as the different elements supply a flavourful insight to the special event. Beef wellington contains many elements to it, classically being mushrooms, beef, and pate then pastry. Along with other components of the dish, the standard dish can be altered slightly to make a ‘poor man’s beef wellington,’ this would swap the beef for sausage meet and black pudding. Black pudding is a useful source of protein which is significant for muscles and supporting a healthy immune system, which makes it a suitable option. A good twist of this is to combine with sausage rolls to make a perfect main which can easily be carried around.
  • For the desserts, in Brazil its customary to have ‘Bem Casados’ which translates to wedding cookies. The cookies are two circle of Victoria sponge with a sweet filling, usually dulce de leche, lemon curd or jam. The stickiness of the fillings represents unity and trust between the newly married couple. They are also commonly tied with ribbon and given as a gift. These cookies are suitable as the sweet filling can be substituted for something healthier like jam as although it may be high in sugar, it is also high in energy and fibre and therefore balancing the diet. This would require making the jam, lemon curd or Dulce de leche which are all very delicate and need to be executed perfectly.
  • Another dessert idea would be lemon meringue tarts. Lemon meringue is immensely popular for all occasions however it brings a sweetness to the ceremony. The Swiss dessert was first made in Europe over 200 years ago. The meringue pie has become so traditional it has been transformed into many other recipes too. Meringues would be very suitable for weddings as they are small yet still plated and have a distinct sweet and sour taste which can be very memorable, for a memorable day. This would require perfecting the curd, so it is not too runny and the meringue, so it is not too soft or over cooked.
