In your new role as the Operations Manager at the Country Hotel Group operating the Country Life Hotel, you are responsible for all day to day business operations and anyadditional projects which have been approved by the Directors and CEO.You have just concluded a meeting with the CEO who has advised you of the hotel’spurchase of another venue. The venue previously operated as a hotel and was recentlyrenovated but the owners were forced to sell due to insufficient funds.As this venue is not currently open for business, you have been asked to develop andmanage the operational planning processes which will be implemented. There are someminor renovations which the CEO is managing, costing a total of $600,000. It is expectedto take six weeks to complete these renovations and the CEO has requested that youprovide the draft Operational Plan within one month, which will then be reviewed andapproved by the Board.he CEO will forward all information regarding the venue to assist you with thedevelopment of the plan. He has requested that you include the budgets for the first six months of operations in your plan.
The new venue is City Hotel and it consists of:
• two main bar areas,
• a bistro with full commercial kitchen facilities
• a beer garden with outdoor stage facilities.
Located in inner city Melbourne, the City Hotel was purchased freehold at auction for$5.2M. The hotel had previously seen a number of lessees operate the venue and tradingfigures have been steadily declining over the past three years. Prior to that the Hotel hadan excellent reputation as a food and entertainment venue and it is well located. TheBoard believes that the hotel, once renovated and with a savvy manager in place, can attract strong market share and they are considering applying for an extended license tooperate as both a day time and late license hotel. The hotel currently has no gaming or gambling licenses and the Board does not wish to pursue these avenues of potential.
