What is the Purpose of this Assignment? 
For the Unit Assignments in this course, we will be working collectively to create an ‘open  textbook’ called Beer Through the Ages to help educate future students as well as a general  audience about the historical significance of beer and its pivotal role throughout history. This is  a renewable assignment designed to create an active and collaborative learning opportunity  through which you can enhance your knowledge of, and appreciation for, the role of beer  throughout history.  
The purpose of the Unit 1 Assignment is for you to research and critically analyze the early  historical evolution of a selected beer and to synthesize, articulate, and share your findings  through the creation of an interactive chapter within the Beer Through the Ages open textbook.  
What is an Open Textbook and Why are we Co-Creating One? 
An open textbook is a textbook that is made available online to be used freely by students,  teachers, and members of the public. Open textbooks are openly-licensed, usually with Creative  Commons licenses, and can be reused, retained, redistributed, revised, and remixed (BC  Campus, 2019). For this course, you will have the option to decide if you would like to share  your textbook chapter publicly upon completion. An open textbook provides a collaborative  space in which you can generate and curate content related to the course themes and materials and serves as a platform for reflection and extension of the course material. Creating an open  textbook also hones research, writing, editing, peer review, and digital literacy skills, which are  all important aspects of general education.  
How will we Create an Open Textbook? 
We will be using a digital tool called Pressbooks to create the Beer Through the Ages open  textbook for this course and to complete the Unit Assignments. Pressbooks is an open-source,  book production software that is built around the WordPress platform and is commonly used for  open textbook projects. You will be introduced to Pressbooks and will gain hands-on experience  using Pressbooks before the submission of the Unit 1 assignment. What are the Unit 1 Assignment Requirements? 
For the Unit 1 Assignment, you will: 
1. Select a beer that you would like to focus on for the Unit Assignments • In Week 3 you will use the sign-up sheet to select a beer from the list that will be the  focus of your Unit Assignments. The sign-up sheet will be first come, first serve, and if  you do not sign-up by the end of Week 3 you will automatically be assigned a beer to   explore for your assignments.  
2. Conduct research about the historical evolution of the selected beer with a focus on the  themes and topics that we have explored in Unit 1. 
3. Based on your research, you will create Unit 1 of your interactive open textbook chapter to synthesize, articulate, and share your research findings. Your chapter should include the  following:  
• Introduction - This section should include an introduction and overview of the beer.

• Origins - This section should describe the origins of the beer and explain how, when,  and where it originated from, and who was involved. It should examine the historical events that were occurring when it was created and discuss the local,  regional, and global factors that may have influenced its beginnings. It should also describe the historical and cultural context in which it originated with a focus on the  themes and topics that we have explored in Unit 1.  
• Key Milestones - This section should describe key events that shaped the early  history of the beer and should discuss the major milestones in the evolution of the  beer and explain the significance of the major events. 
• Multimedia –You should include at least three multimedia elements (i.e. images,  diagrams, videos, sound clips, maps etc.) to enhance and extend the content. o When possible, please try and use multimedia elements that are in the  public domain or carry a Creative Commons (CC-BY, CC-BY-SA or a CC0) 
license, and that you indicate and link to the source in your textbook  
chapter. The following are useful sources of public domain and CC-BY  
licensed multimedia content: The Internet Archive, Creative Commons, The  Met Museumm, Flickr, Open Culture, Free Music Archive, Pixabay, Pexels,  Wikimedia Commons, and UnSplash. 
• Knowledge Checks – You should include at least two knowledge checks for readers  to allow them to check their knowledge of the chapter content. These knowledge  checks can include any of the interactive formats available on the Pressbooks site.  Possible knowledge checks include: 
(1) Interactive video, interspersed with multiple-choice questions, or hot  spots linking to more information on the subject;

(2) Multiple choice  
questions; (3) Fill-in-the-blank statements; (4) Drag and drop labeling exercises which will allow the association of terminology with visual representations; (5) Images with hot spots linking to additional information  about a topic; (6) Timelines representing events relating to historical events,  etc. 
• References: You should support your research with at least three sources and cite  your references using in-text citations according to the APA Format. For those who  may be unfamiliar with the APA format please refer to the following: APA Citation  Style. 

Your textbook chapter should mostly be in your own words. All uses of source material must be acknowledged with both in-text citations and corresponding entries in your reference list. How do I Create My Open Textbook Chapter? 
1. Create a Pressbooks account 
• You will receive an email from Pressbooks with an invitation in your DC Mail to join  the Beer Through the Ages open textbook (please check your Junk Mail if you do not  receive it). The email will contain a link to activate your user account. 

• Follow the activation link to create your Pressbooks Account. 

2. Login to Pressbooks and access the textbook chapter for the beer that you signed up for. • Go to https://ecampusontario.pressbooks.pub/gned1478/wp-login.php and log in  using your Pressbooks Account information. 

• Click on the link to the beer that you signed up for under the Dashboard in  Pressbooks. 

3. Use the Pressbooks editor to add your content, multimedia, and knowledge checks to the  textbook chapter and click Save.

• Adding Multimedia - The Add Media option will allow you to add your multimedia  to your textbook chapter. Please see Embedding Media for additional information. • Adding Knowledge Checks - The H5P Content option will allow you to create the  knowledge checks and add them to your textbook chapter. Click on H5P Content,  then click Add new at the top of the screen. In the first text entry box, give your  content a descriptive title, and pick the type of content you’d like to create. Once  you select a content type, you’ll have links to a Tutorial on how to create it, and  links to Examples on h5p.org. Please see H5P for Interactive Material for more  information.
