Scenario: Bakery

 A bakery has employed a local contractor to install a LEV system to remove flour dust from various processes including ripping and tipping sacks of ingredients into large bowls, sieving and mixing. The ingredients include wheat and corn flour, sugar, powdered egg, powdered milk, yeast, salt and water. A single hood system was installed as shown in the photographs below.

The system was commissioned and tested by the installer and passed by a “competent” LEV supplier. The ducting from the hood passes up into the ceiling void before dropping back down onto the collection filter a few metres away. After being filtered by a single cartridge filter, the air is returned back to the working environment.

One year after it was installed, the bakery has called you in to conduct a routine review and to test the system, they want to make sure it is protecting the workers. Your equipment includes a thermal anemometer, a pitot tube and micromanometer, dust lamp, an infra-red real time respirable dust instrument and a smoke generator [glass smoke tubes are not normally allowed in food factories].

You ask the baker to make a batch of dough whilst you observe the process. He places the hood towards the rear of the automatic mixer bowl (approx. 900 mm diameter) on the opposite side that he is working and starts emptying quantities of the dry ingredients into the bowl. On completion he moves the bowl under the mixer. He then stands on the empty bags to compress them and squeezes them up to place them in a waste sack. He uses a dustpan and brush to clean up any spillages. Using your dust lamp, you quickly establish that dust is not being effectively captured as he tips the ingredients into the mixer.

The dust you observe appears to be within his breathing zone, and some falls onto the floor. Real time respirable dust measurements taken in the operators breathing zone range from 3.2 mg/m3 to 17 mg/m3with an average value of 5.6 mg/m3 for the 8 minutes of the task cycle.

Background dust measurements in the area indicate that dust in the general area is between 0.5 and 1.1 mg/m3 for some 12-15 mins after completion of the task.
