Individually, you are required to review a menu and its food items from a food and beverage outlet that will be assigned to you by your workshop facilitator in week 2.

Assessment Description
The purpose of this individual assessment is to develop student skills in understanding the role of menu planning and its importance in successful food and beverage operations. This will enable students to learn fundamental evaluation skills and foster further understanding of hospitality services.

Assessment Instructions
During week 2, your workshop facilitator will assign you a food and beverage outlet from the state in which your current campus is located. If you are located offshore, please consult with your workshop facilitator. Please note that if you focus on any other food and beverage outlet than the one your workshop facilitator provides, your submission will receive a grade of zero. Once you have been assigned a food and beverage outlet, you are required to prepare a written analysis that covers the following points:

• Provide a detailed review of the assigned food and beverage outlet and identify its current menu concept.
• Identify the potential problems in the menu (i.e., selection of the dishes and design) and propose an alternative menu concept. Justify the reason behind your proposed changes.
• Redesign the menu by creating a new menu based on the identified problems and proposed menu concept. For those students who are new to menu design, please use the following free application.
• Provide screenshots from TripAdvisor showing the negative reviews you chose to identify problems and an image of the original menu in the appendices section. 

In preparing your food and beverage review, you will need to use at least 6 current sources of information that are referenced in accordance with the Kaplan Harvard Referencing Guide. These may include the TripAdvisor website, corporate websites, government publications, industry reports, census data, journal articles, and newspaper articles. These sources must be presented in the form of in-text citations and a reference list at the end of your written submission.
