Phenolics compound in wine are mainly derived from grapes, which may undergo various types of transformations during winemaking process. Yeast is one of the major factors influencing the phenolics transformation during grape fermentation, thus influencing the quality of wine. This project allows you to compare different Saccharomyces and non-Saccharomyces yeasts in their impacts on wine phenolics content.

Four types of yeast will be used for winemaking:
