Task: The case study Background Two friends, Elsa and Lee opened their food business ‘Thai Khao’ a year ago. They operate from a food cart in central London specialising in Thai food. Lee is the main chef with Elsa assisting him with cooking. Their food is very popular with office goers as it is available at a reasonable cost and in medium and large plastic boxes which can be eaten on the go. Their menu includes vegetarian and meat Thai starters and the green and red Thai curry with rice which is the most popular with customers. The present situation Elsa and Lee maintained a good service until the customer base was manageable. Thai Khao’s customers increased over the past 6 months due to the popularity of their food. The quality of the food is still excellent but the two are struggling to maintain the previously provided service. The customers have had to wait for their food longer than usual and are not happy about this due to their limited lunch hours. As a result, some customers suggested that Thai Khao needs to start delivering their food to offices. It is an excellent idea but this entails further investment in terms of resources. Another issue is that their current contract with food suppliers has expired and the new contract with the same supplier expects them to order larger quantities of food supplies. They are now having problems storing their inventory and considering leasing a storage place. However, they are in a dilemma as leasing a place in central London close to where they operate is very expensive. More so, they are managing all of this by themselves. A further problem for Elsa and Lee is the new Environmental regulation introduced by the government. This affects any business using plastic as a means of service. They have until 3 months to change their take away boxes and have started looking for a new supplier. The Future… Elsa and Lee plan to open a restaurant but they cannot do so yet due to financial limitations. They have to first tackle the hurdles they face at this point and then plan further.
