Overview:

The purpose of this assessment is to enable students to develop deeper knowledge of key nutrients essential to health. Self-assessment is intended to facilitate experiential learning on which to build skills in clinical nutritional assessment, including the use of dietary assessment software.

This report will provide a structure that may be utilised as a revision tool or incorporated into other subjects as a future resource for case assessment and analysis. This task will allow students to advance their skills in sourcing and identifying reliable academic resources (peer-reviewed literature) and develop academic writing skills.

Task:

Using Foodzone dietary assessment software you are to analyse your own dietary intake over three days, or the diet record provided, to compare your nutrient intake to the Nutrient Reference Values (NRV) and use this analysis to write a nutrient report identifying key nutrient imbalances and their implications for health and disease. Using peer-reviewed literature to inform your discussion, you will outline the key functions, signs and symptoms of deficiency and excess and associated disease risks of one macronutrient and two micronutrients identified in the analysis. You will create dietary SMART goals and strategies to correct the imbalances and comment on the feasibility of incorporating these strategies based on your ecological nutritional assessment.

  1. Set up your profile in Foodzone and enter your diet over three (3) consecutive days, including one weekend day or day off work/usual routine OR alternatively, use the alternative data and 3-day diet record provided
  2. Generate a Nutrient Report AND a Meal Report from your 3-day diet record and upload these as separate PDF file uploads (see Foodzone tutorial in Assessments tab on LMS)
  3. Provide a brief overview of your ecological nutritional assessment, including age, gender (pregnant or lactating as applicable), PAL, work/study/children/carer/volunteer/other commitments, dietary allergies/pattern/choices and quality (e.g. vegetarian; purchase food for household from farmer’s market and supermarket; cook meals from scratch for two adults and one child on 4/7 days; partner cooks 2/7; eat out 1/7) OR summarise the alternative data provided
  4. Record your EER and actual energy intake (total average daily kJ) from the dietary analysis with the macronutrient content in the Table 1 template provided (insert into the report as Table 1 Summary of Dietary Analysis)
  5. Identify two (2) micronutrients with the greatest imbalance from the dietary analysis and include them in Table 1
  6. For each micronutrient, outline the following with reference to the peer-reviewed literature published within the last 10 years (prescribed texts are acceptable in addition to journal articles):
  • Briefly describe the key functions
  • List at least three (3) physical signs (these are objective – can be observed) or symptoms (these are subjective – can be experienced) of deficiency
  • List at least two (2) physical signs or symptoms of excess
  • Discuss the disease risks if the imbalance is not corrected
  • Create a list of foods and serving sizes that will provide the daily NRV within your dietary pattern (or the dietary pattern of the provided diet) using the Table 2 template below (insert into the report as Table 2 Dietary Strategy to Provide NRV for AND Table 3 Dietary Strategy to Provide NRV for as shown below)
  • Comment on the feasibility of the dietary strategy to correct the micronutrient imbalance, including (briefly) how the foods might be incorporated in meals and snacks over a day (or week if applicable) and identify potential barriers to implementing the strategy with solutions by referring to the ecological assessment

Write three (3) dietary SMART goals to address the nutrient imbalances identified in your report
