Learning Outcomes:
Case Study 1 (total 13.5 marks):
Jack is a 20-year-old male whose diet predominantly consists of little meat, fresh fruit and vegetables, but lots of fast foods, toasted cheese sandwiches and oven-cooked pizzas. Jack frequently rushes his meals and forgets to drink water throughout the day. He often suffers from constipation and fatigue; however, he visits his parents’ home in South West Western Australia once a month where his diet changes to consist of plenty of fresh fruit and healthy meals. While staying with his parents, he has less frequent bouts of constipation but continues to feel tired. He started taking antibiotics due to a recent illness and has suddenly been passing loose stools (diarrhea).
Question and answer template:
With respect to Jack’s metabolism, showcase your understanding of the main four steps in the metabolism of glucose to pyruvate, the metabolism of glycerol, the metabolism of fatty acids, and the metabolism of amino acids. In your answer you are required to draw and explain each of the four pathways. You must also explain the purpose of the TCA/Krebs cycle and the Electron Transport Chain (5.5 marks).
Propose four specific dietary recommendations for Jack to enhance his usual diet in order to improve his bowel health. Include a justification for why each dietary recommendation would enhance Jack’s bowel health. Cite at least two peer reviewed journal publication or credible website per recommendation, out of those listed on your Unit Plan’s ‘textbook’ and ‘significant references’ page (including the ECU Library’s Health Sciences Subject Guide), in order to strengthen your recommendations
Case Study 2 (15.5 marks):
Sarah is a 19-year-old keen recreational swimmer who weighs 60 kg and is 170 cm tall and has a physical activity level (PAL) of 1.6. Sarah wants to optimise her nutrition. Her teammates said that they are taking multivitamin supplements which contain both water-soluble and fat-soluble vitamins and have encouraged her to take a multivitamin supplement too. They believe the supplements are more “bioavailable” than food and provide them with a competitive edge in their upcoming ocean swim. Sarah knows you are studying a nutrition major at ECU and has asked you to review her diet using FoodWorks and provide your opinion on whether she should take a multivitamin supplement. Her 24-hour dietary recall is below. Use FoodWorks to analyse Sarah’s intake and provide your recommendations accordingly.
Question and answer template:
Based on Sarah’s dietary analysis, answer the following questions:
Would you recommend Sarah consume the multivitamin supplement? Yes or no, provide two reasons for your recommendations (2 marks).
Reference the Australian Dietary Guidelines and at least two peer reviewed journal articles in your recommendations above (1.5 marks).
Considering the specific nutrients that Sarah did not consume in recommended amounts, outline four dietary changes that Sarah could implement that would enable her to meet the respective Acceptable Macronutrient Distribution Ranges, Recommended Dietary Intakes (RDI) and Adequate Intakes (AI). In your answer include the amounts/serves required of each food that could be swapped or added to Sarah’s diet that would help Sarah achieve her dietary goals. Include a screen shot of your FoodWorks analysis in your submission (12 marks).
Case Study 3 (8 marks)
Luke’s friends at his local gym have started following a keto diet, which typically includes high fat meat, butter and very low amounts of carbohydrate-containing foods. In addition, they have recently started taking amino acid supplements. Overall, the high protein, high fat, low carbohydrate diet provides Acceptable Macronutrient Distribution Ranges of 30% protein, 65% fat and 5% carbohydrate.
Question and answer template:
List and define four major roles of proteins in the body, giving an example of each
Luke seems keen to try to keto diet himself. Discuss four nutrition recommendations that you would give Luke to help him to make an informed choice, taking into account effects on his health in the short and long term. In your answer, cite one peer reviewed publication for each of your recommendations. Write your recommendations and reasons in complete sentences (4 marks).
Case Study 4 (13 marks)
Millie is 55 years of age, is quite short in stature and has gained a substantial amount of weight over the last five years. Unfortunately, she has experienced a relationship breakdown and has decreased her physical activity levels. She also has easy access to readily available energy-dense, nutrient-poor foods in her suburb, which she consumes 2-3 times a week, when she feels tempted. She feels very stressed most days of the week and just doesn’t ever seem to feel full. She now has a Body Mass Index (BMI) of 30 kg/m2, has substantial abdominal/central adiposity and was recently diagnosed with a thyroid hormone imbalance.
Question and answer template:
How would you explain the process of hunger and satiation if you were explaining it to Millie? You need to use correct terminology and explain any complex terminology in a way that she will understand. Demonstrate your understanding with the use of a diagram to explain the process, and ensure you reference your textbook for this unit in your response (4 marks).
Outline three chronic health consequences associated with a Body Mass Index above 30 kg/m2. In your answer provide a referenced reason/justification for each health consequence (3 marks).
You are working with Millie as a nutritionist. What three dietary suggestions would you make to Millie, which align with the Australian Dietary Guidelines (ADGs), to increase her satiety across breakfast, lunch and dinner? In your answer, you must: write each suggestion in a sentence (rather than a dot point), clearly explain how each of your suggestions align with the ADGs and include a reference for each recommendation (6 marks).
