Task: To undertake research into the establishing of a liquor licensed hospitality business in Melbourne and the required compliance activities for this business. The research is undertaken during class time and under teacher observation. The research will require some work outside the class time and the student is required to log the time spent.
- Write a detailed report addressing the relevant information.
- You need to decide upon what type of hospitality business you want to analyse e.g., bar, restaurant, club, etc.
- Then decide on the location of the business. You must provide the full address and state which local council area it is in. Provide a brief summary on your business (What do you sell? What is your clientele? etc).
- You are then required to undertake research and interact with relevant people / authorities, which addresses each of the following 14 sections.

- Write about the information, how the document relates to your business, assists achieving compliance and its importance to the business; and,
- Include printed copies of forms and documentation in an appendix clearly labelled with the relevant section number indicating which of the 14 sections the information relates to.

1. Description of business
The name, address, type of business and name of the local government. Provide a brief summary on your business activity.
2. Zoning
Contact the appropriate local government (council) to establish correct zoning on your business activity. Collect and complete a town planning permit application. The application’s address should be correct for the zoning.
3. Liquor license
Contact Liquor Licensing Victoria at the Department of Justice. Collect and complete a license application pack. All appropriate documentation must be included and completed using the name, address and other details of your business .This may include a public notice, a statement of display and a police questionnaire.
4. Registered trading name
Contact The Office of Fair Trading. Collect the appropriate information and complete the documentation.
5. Legal entity
Decide what type of legal entity you require or you wish to acquire, i.e. Partnership, Company, Sole Trader or Trust. Contact: Australian Securities Commission. Collect the relevant information and documentation.
6. Tax Registration
Contact the Australian Tax Office and complete the formalities required for your business including registration for GST / Superannuation and others.
7. Fire Safety Regulations
Contact local government or M.F.B. website and make provisions to comply with the regulations such as extinguishers SITXGLC001 and safety lighting. Provide a sketch of the business premises indicating compliance with the regulations.
8. Car Parking Requirements
Contact the appropriate local government (council). Obtain a parking permit if necessary for your staff, your customers and your suppliers.
9. Noise abatement restrictions
Contact local government or the E.P.A to find out if your business needs to comply with any noise abatement restrictions. Collect necessary paperwork and complete. (e.g. this is important if you have late night licence and you are in a residential neighbourhood)
10. Insurance
Contact and obtain quotes from 3 insurance companies that offer commercial insurance. Include at least one proposal for coverage of the following: Public Liability, Fire, Theft or Vandalism.
11. Employment Contract
Draw an offer of employment to a prospective employee – including Period of Employment, Hours of employment, Duties, Wages, Annual leave, Sick leave, Dismissal procedures, Superannuation (e.g. Host Plus), Public Holidays and other conditions and benefits.
12. Supplier Contract to include
Draw a contract SITXGLC001 of services required to one of your prospective suppliers – including period of supply, scope of supplies, performance indicators, payment terms, terms & conditions to void the contract, penalty and other considerations / conditions.
13. Food Registration
Contact the local council for the relevant forms to obtain the necessary certification
14. Plan of the premises
Draw a sketch showing access and exit points including the areas such as: liquor consumption / service areas, food areas etc. This should be to a scale of 1:100
