You have been appointed the Quality Assurance Man/ager for a large national food processing company. One of your duties is to assess the microbial quality of a new food product that the company has developed and wishes to sell on the national market.  This will take the form of a formal report to the Managing Director.
Each student will be assigned a product in the first class and the following issues will be required to be researched:
How is the product going to be manufactured?  This is to be examined from a large scale manufacturing perspective, not a home kitchen one. 5 marks
Discuss the intrinsic and extrinsic parameters of this product. 10 marks
What microbiological aspects need to be considered  when manufacturing this product?                       (a) What bacteria are associated with this product?(b) Where does the contamination come from?(c) What microbiological standards/guidelines must be considered when manufacturing this product?       15 marks
To ensure your commodity is fit for human consumption, microbial testing needs to be conducted.  Give a table outlining the microbes you would authorise for testing, how many units need to be tested and the limits that are acceptable.    You must consider both food safety and food quality. 15 marks
Outline and justify how often you would conduct the testing. 5 marks
Outline any changes you would make to this product to make it a safer product.  If you do not believe that any changes are required, justify this position. 5 marks
