Objectives
This experiment aims to work with yeast and to test how different variables affect the production of carbon dioxide (a product of yeast fermentation). Unlike previous experiments, you will have to make more decisions about your experiment and adjust the method to ensure you collect suitable data.

Procedure
1. Choose several food sources for testing and complete the list below. You will need a minimum of two sources additional to sucrose. Choose foods that may be expected to produce different results (not, for example, three different grades of white sugar such as sugar cubes or caster sugar). If you wish to test more than five sources simply extend the list.

3. Write your draft procedure outline in steps. Ensure you have planned for the following:

  • Run a control trial – this is where there is no effect from the independent variable.
  • Based on background research, run some trials using sucrose to determine optimum values for the control variables which you expect to have an influence on the results. These may include sample volume, yeast/food ratio, starting temperature and other variables you consider important.
  • For more reliable results, plan to have a least 3 trials for each condition.
  • Try to make your steps as efficient as possible, e.g. mixing one solution and then dividing it into separate trials.
  • As soon as yeast and sugar meet in a liquid medium the fermentation process begins so it helps to think ahead and clarify when quick action is needed.
  • You will be observing physical changes AND measuring the amount of CO 2 collected
  • This base method will be directing you to collect CO 2 as per figure 1.
